Coconut Super Smoothie

I love young Thai coconuts! They are one of my favorite bases for a smoothie, and so healthy for you! If you are new to green smoothies, baby spinach has a very mild flavor. I offer two different versions for the recipe below.


1 fresh Thai young coconut* – water and coconut meat

1 ripe peeled mango* – remove the pit!

1/2 of a ripe avocado*

2 C baby spinach


1 C frozen blueberries

1 Tbsp spirulina

Be sure once the coconut is open that the water and flesh are white. If it has a tint of purple it is beginning to turn and should be discarded. Pour coconut water into blender, scrape out the coconut meat with a spoon and add to the blender. Add the rest of the ingredients. If using spirulina, wait till the smoothie is blended to add the powder and then blend again
